Muffins are a great snack. They are the perfect thing to have with a tea or coffee or even for breakfast. There is something incredibly tempting about a delicious fresh hot muffin.
Then there are muffins that you make yourself. Those you can eat directly out of the oven and that’s when the taste sensations really kick in.
These muffin recipes will satisfy all your muffin cravings. They contain, fruit, chocolate and sometimes a bit of both.
One thing is for sure and that is if you love your muffins, you are going to want to try each and every one of these muffin recipes.
What Is The Difference Between a Muffin And A Cupcake?
It can be easy to confuse a cupcake and a muffin. They both look pretty similar and of course they are both incredibly tasty.
However, a muffin IS NOT a cupcake.
Cupcakes are simply miniature cakes whereas muffins are miniature breads. Cupcakes and muffins have a noticeable texture difference which is due to the difference in the mixing of the ingredients and the ingredients themself.
Cupcakes are made by creaming the butter together. This creates a smooth and fluffy texture. Muffins on the other hand is briefly beaten and remains lumpy.
You will also often see cupcakes have various creamy toppings, whereas muffins do not. The difference of flavor in the muffins is always within the muffin itself. You may sometimes see a tiny cream cheese topping on the muffin, but never a major frosting like you will see with cupcakes.
Muffins are also deemed to be healthier (which is not always the case!). However it is not unusual to see a muffin as a breakfast option, whereas you would never see a cupcake on a breakfast menu.

How To Make Muffins Light And Fluffy
If you find that your muffins always tend to be heavy and dense, then you might like to try a simple fix.
Having the eggs and butter at room temperature before you begin to make the muffins will help the mixture to form smoothly. The smooth mixture traps the air and this is what helps to make the muffins light and fluffy when they are baking.
Another thing to remember is not to overmix the batter. Over mixing will cause the mixture to become dense and heavy, so as soon as the ingredients look mixed together, stop!
How To Store Muffins
The best way to store muffins is to leave them in an air tight container for 3-4 days. They are best eaten fresh, but can certainly be kept for a few days. You will however notice that the muffins become a little dry after a couple of days.
One thing to remember is NEVER store your muffins in the fridge. The cool temperature of the refrigerator changes the texture of the muffins and dries them out. No-one want to eat a dry muffin!
Don’t worry though, because a batch of muffins never really lasts that long anyway!
If you want to make the muffins to be eaten at a later date, then they can be placed in the freezer for up to 3 months. Ensure that the muffins are placed in a sealed bag.
