I mean, we are running around trying to squeeze in the 9-5 thing at the same time as doing Kindy and school runs, not to mention trying to cook dinners for the family and fill the kids lunch box’s with tasty but not completely unhealthy snacks.
Sometimes it can all seem too much and busy mornings just seem to get busier.
Time is always in short supply and the time between school drop off and pick up just goes in a flash.
I swear that time has this little evil way of running at twice the pace when the kids are not in the house and it goes twice as slow when they are.
I’m certainly not saying that I don’t enjoy having the kids at home, but I am realistic and I know that trying to get anything accomplished with young children is pretty much mission impossible.
Despite starting the day with a whole list of jobs that you know you will definitely get completed in the few short hours the kids are out of the house, the reality is that it’s only ever one or two that get knocked off.
The other tasks would have been completed if time ran at it’s normal pace, but school pace is another story.
The Quick And Easy Snack The Kids Will Love
When the kids are at school, the time spent at home must be spend wisely. Spending hours baking is just not practical.
Quick, easy recipes that the family will love are a must in my house and any house that has kids.
Do you need something prepared and baked in less than half an hour that is going to taste absolutely incredibly and not be too unhealthy either?
This date muffins recipe is an absolute winner. They are a great way of giving the kids (and yourself) a little snack without being too unhealthy. They are a game changer for that after school snack.
And besides. It’s always great to have some new muffin recipes to try.
About These Awesome Date Muffins
At first glance, you may not be overly sold on the idea, but let’s face it: Dates, oats and honey, it really is a taste combination that is going to send the taste buds into a frenzy.
You know what it’s like when you have the oven on and the house starts to fill with a delicious aroma that just makes your stomach rumble. These simple muffins totally do that!
Bake these date muffins then pop out and pick up the kids. On their return home they will be flocking to the kitchen to grab one of these muffins as their afternoon snack.
If you are lucky there may be some left for their lunch box the following day. (Maybe make a double batch just in case).
The even better thing about these oat and date muffins is that they don’t even need to look that great to still smell and taste amazing.
You can literally throw all the ingredients together into a large mixing bowl, then into the muffin pan without worrying how ‘pretty’ they are going to look.
Pretty is not the main objective here. Quick, easy, and full of taste is!
If you make date muffins with brown sugar and almond milk or oat milk, you can even convince yourself that they are healthy too. Then you can totally eliminate all that mom guilt of not giving the kids healthy snacks.
The honey combined with the small amount of brown sugar means you can eliminate all the added sugar that you find in regular muffins.
How To Store The Muffins
The best way to store the date muffins is in an airtight container and then placed in the refrigerator. They wont last for a long time, so it’s best to eat them fresh. They will however remain fine to eat for up to three days.
To have the muffins on hand when you need them, you might be inclined to make a double batch and then freeze them. Ensure that they are lined with parchment paper to avoid freezer burn. Then in the morning, pull out a muffin, add to the lunch box at room temperature and they will be perfectly ready for eating at lunch.
Muffin Variations
Whilst there really is no need to change the ingredients of the muffins, there may be times when you wish to change up a little bit of your favorite muffins.
Here are some suggestions on what you could change. Each of these muffins would go great with a cup of coffee!
- Orange Date Muffins: Add some orange essence or fresh orange zest to the muffins for some extra tang.
- Chocolate Chips: Everyone loves chocolate in a muffin, and whilst it doesn’t make them healthy, it certainly makes them delicious. A small 1/2 cup or 1/4 cup of chocolate chips is all you need to add in that extra bit of naughty!
- Date Nut Muffins: Dates and nuts go really well together. You want to ensure that you don’t add too many nuts to the original recipe as you don’t want to make them too heavy. Add up to 1/2 cup of nuts (walnuts would be perfect) and reduce the oats to the dry ingredients. Date and walnut muffins. Totally yum!
- Cream Cheese Topping: Feel like going the extra mile? In a separate bowl, make up some cream cheese topping that will literally be the icing on the cake!
- Use Whole Wheat Flour: If you want to make them even healthier, then change the flour mixture from self raising flour to whole wheat flour. Just use a little extra milk to lighten up the mixture if you feel it will be a but too heavy.

Delicious Date Muffins

Ingredients
- 1 1/2 cups self-raising flour
- 1 teaspoon baking powder
- 1 1/4 cups Traditional Oats
- 1/3 cup brown sugar
- 1 cup dried dates, roughly chopped
- 150ml vegetable oil
- 1 egg, lightly beaten
- 1/2 cup almond milk
- 3 tablespoons honey
Instructions
- Preheat the oven to 180ºC or 350ºF.
- Grease a 12 hole muffin tin.
- Sift together the flour and baking powder. Add the sugar, oats and chopped dates.
- Whisk the oil, egg, milk and honey together and fold the flour into the mixture until fully combined.
- Spoon into the muffin tray and sprinkle the tops of the muffins with oats.
- Bake 15-18 mins or until golden and firm to touch.
Of course, there is no way that date muffins compare in healthiness to a piece of fruit, but who are we kidding. There is only so much fruit that we can convince our kids to eat.
The next time that you are running around between school drop offs, rushing to get to your 9-5 job and thinking you need to be supermom who also bakes the perfect snack for the kids, take a moment to remember this easy muffin recipe.
