Rainbow cupcakes sound complicated. So many colors in one little cupcake, it all feels rather too overwhelming.
Well, it might be if you wanted to have the actual cupcake in layers of colors.
This little cheat version still produces colorful rainbow cupcakes, but in a completely different way and without using different colored batter.
And besides, I actually think they look more effective than having all of the colors of the rainbow in the actual cupcake!
So this isn’t a rainbow cupcake recipe, but rather some simple decoration that will turn an ordinary looking cupcake into and adorable one. And the best part is that it is completely easy to do.
If you have been following me for a while, you will know by now that if I add a recipe to this blog, then it is going to be easy.
The aim is to achieve the best results the easiest way possible.
This tutorial allows you to gain the rainbow colors and effect in a super simple way without having to fuss around with the layering of cupcake batter.
I am a no fuss, quick and easy kind of girl when it comes to anything in the kitchen.
Therefore you can trust me when I say that these rainbow cupcakes are fool proof and are perfect for us busy mom’s.
Rainbow Cupcakes Perfect For A Trolls Party
For my daughter’s 6th birthday party she requested to have a Troll’s themed party.
Initially I thought she might want to stick to Poppy and Branch’s colors (pink and blue), but no, she wanted to have all the colors of the rainbow.
She explained to me that Trolls were every color you can think of, therefore the party decor needed to be super bright and cheery.
A rainbow she explained. A Troll’s party needs to be like a rainbow party!
So, we agreed on a Trolls/rainbow birthday party and I think it worked really well.
These rainbow cupcakes looked super cute on the table and the fact that they were so easy to make was just an added bonus.
6 Steps To Making Simple Rainbow Cupcakes
Step 1: Bake The Cupcakes
The first thing you need to do is bake your cupcakes.
As you know I am an advocate for using a packet mix, simply to make things quicker and easier. I want to be spending the time on the decoration, not making the cupcakes. Besides, cupcake mix’s are incredibly yummy too!
Of course, if you have your own cupcake recipes that you want to use, there is absolutely nothing stopping you.
For the cupcake liners, I chose a silver color as this matched the theme of the party. However you can choose whatever color you wish.
You could choose blue for sky, green for grass or white for more clouds.
Step 2: Prepare The Cupcake Topping
Once the cupcakes have been baked, leave them at room temperature to cool. Ensure that you have cool cupcakes before you commence any of the decoration.
In preparation, lay out everything that you need for the decoration.
Having everything to hand will make the task a whole lot easier.
Step 3: Prepare The Rainbow Candy
Cut the candy rainbow strips. I cut them into 3 pieces. Two pieces were the same size which left a tiny piece on the end (which I just ate!).
I felt that cutting the strips in half made the rainbow arc too big (and saggy), but cutting it into 3 pieces didn’t create a large enough arc.
Feel free however to play around with the size pieces to suit yourself.
Step 4: Frost Cupcakes
To frost the cupcakes you could choose to use either vanilla buttercream frosting or cream cheese frosting.
Place the chosen frosting into a piping bag and decorate with a classic cupcake swirl. This is an easy piping decoration to complete and looks super effective too.
I chose to decorate with white frosting to act as clouds, but you could choose green or blue frosting and it would still look great.
Step 5: Add The Candy Rainbow
Place one end of the rainbow strip into the top of the icing and then fold over the cupcake. Place the other end of the rainbow strip into the other side of the icing to create an arc on the top of the cupcake.
The rainbow strip now looks like a rainbow sitting on little fluffy clouds.
You could opt to also use a few rainbow sprinkles around the base of the candy rainbow to give a bit of extra color, but I didn’t feel it was necessary for these cupcakes.
Step 6: Enjoy The Cupcakes
Stand back and admire your super easy rainbow cupcakes before they get eaten quick smart.
Be sure to place the cupcakes into an airtight container until you need to use them, to maintain their freshness.
Did you notice that the color of the cupcake changed in the last tutorial photo?
I completed all the vanilla cupcakes and then noticed that I hadn’t taken a photo of this step. Oops. Luckily I still had the chocolate batch to do, so hey presto, tutorial complete.
There is nothing like stopping to take photos whilst madly getting all the party preparation completed. I’m sure you will forgive me on this one.

Not only are they the perfect cupcake for birthday parties, but you could easily use them on St.Patrick’s day, any special occasion or just for a fun special treat.
If using them for St Patrick’s day, try adding a little bit of gold sugar pearls at the bottom of one side of the rainbow to act as a pot of gold.
They are also the type of cupcakes that the kids will enjoy creating, so keep them as a ‘go to’ option when you are looking for some school holiday fun.
