Potatoes truly are a fantastic accompaniment to any main meal. Ilona brings us today these delicious basil roasted red potatoes. I think you will agree that they look incredibly tempting!
Today, I’ve decided to make these delicious basil roasted red potatoes. And I’ve got some history to tell you. In the meantime I hope you enjoyed my Christmas Mushroom Pizza Appetizers that can be made any time. Just different cookie cutter can be used to cut pizza dough.
Let’s get back to my favourite potatoes. Since I was a little girl I always remember that I loved potatoes. Mashed potatoes, roasted potatoes, cooked potatoes… any kind. For any type of dinner they always had to be on my plate with meat, salad or even poached eggs. Today it’s the same, I prefer potatoes over rice, quinoa, or pasta. If I see potatoes it’s a win-win situation for me and I am happy. Throughout my life I never run out of potatoes, they are always around my house.
Recently, I was thinking about new “potato dinner ideas” and I’ve made these roasted red potatoes topped in butter, garlic and dried basil. I can tell you they are very good and most importantly very easy to prepare. Just mix melted butter with garlic powder, basil, salt and pepper. Marinate potatoes and bake. That’s all.
I grew up in Europe where potatoes are served very often. There are many possibilities to use them in any recipe.
In Europe we even make dumplings with mashed potatoes and onions. These are my favorite dumplings. Some other recipe that I can think is mixing potato starch and mashed potatoes to make another type of dumplings. Believe me there are many recipes that involve potato and I love them all.
For today’s recipe I picked red potatoes; but basil roasted white potatoes will be perfect too.
Basil Roasted Red Potatoes
The perfect accompaniment to any main meal.
Ingredients
- 5 medium-sized red potatoes
- 1/4 cup melted butter
- 1/8 tsp. garlic powder
- 1 tsp. dried basil
- salt/pepper to taste
Instructions
- Preheat the oven to 350 F
- Wash potatoes and cut each potato into 4 sections.
- In a small bowl mix melted butter with garlic powder, dried basil, salt and pepper.
- Marinate potatoes.
- Lay them nicely on the pan and bake for 90 minutes.
