These healthy Parmesan zucchini bites are quick to make and require only 3 ingredients.
Small zucchini bites sprinkled with grated Parmesan cheese and a little salt. They are a tasty appetizer for any day.
Summer is over but we still have lots of zucchini in the stores. I am glad that we have this vegetable.
A couple of years ago I didn’t really like zucchini, it was a plain veggie for me. However, over the years I have realized how many tasty zucchini recipes can be made.
I use zucchini often now, and I especially love zucchini bread. I can sneak some veggie in my baked goods. And most importantly my children love it.
I like to make zucchini fritters and over the summer I was making them weekly.

How To Make Delicious Zucchini Bites
A lot of time I bake my zucchini slices and I serve it with meat and potatoes. However a couple of days ago I wanted to add some more flavor to it. I had my Parmesan in the fridge and I thought that Parmesan zucchini bites would be perfect.
I just sliced my zucchini and baked it at 400 F. After some time I added some grated Parmesan cheese.
It was so easy and everyone at my home loved them.
They can be served at a party or as a side dish for dinner.

Parmesan Zucchini Bites Recipe
Baked Parmesan Zucchini Bites
These baked zucchini bites are so simple to make, they taste delicious and are healthy for you too.
These simple bites are perfect as a snack, appetizer or side dish.
Ingredients
- 2 medium-sized zucchini
- 4 Tbsp. grated parmesan cheese
- 1 Tbsp.oil
- salt to taste
Instructions
- Preheat oven to 400 F. Lay parchment paper on baking sheet.
- Slice zucchini and place on baking sheet.
- Sprinkle some oil and salt.
- Bake for 20 minutes.
- After 20 minutes add parmesan cheese an bake for another 5 - 10 minutes.
Recipe Options
For a slight twist on the above recipe you might like to try the following:
- Add a squeeze of lemon to the top of the zucchini after baking
- Add a sprinkle of herbs to the zucchini bites
How To Store Baked Parmesan Zucchini
Whilst baked Zucchini is best eaten as soon as it’s made, it can be stored in the fridge. Ensure that it is placed in an air tight container and only leave in the fridge for a couple of days.
The zucchini bites can be eaten cold, or if preferred warmed again in the oven at 400 F until the zucchini is hot.
Do not overbake the zucchini otherwise it will become soggy.
How To Avoid Soggy Baked Zucchini
If you want to ensure that your zucchini stays crispy, the best way to do this is to place the zucchini onto a baking rack which sits on the top of the baking tray.
This will allow the air to circulate evenly around the zucchini and produces the best crispy zucchinit bites.
