Today our contributor Ilona from Ilona’s Passion shares a quick and easy bacon mini quiche recipe. Prefect for party appetizers or to spruce up those lunch box’s!

This mini quiche is so easy to make and most importantly it requires only 4 ingredients. I love simple recipes and especially for the party they are very useful.
Sometimes if you don’t have time to make a fancy appetizer or a dish just make this mini quiche and you will be amazed how good they are.
This mini quiche can be served hot or cold, so it’s very convenient if you’ll bake them early. Also if you are not a fan of bacon you can simply use ham.
I had a cooked bacon in my home that I got from the store the other day. If your bacon is raw you need to cook or fry before using for this recipe. I made 6 mini quiches with this recipe but if you wish to make more just quickly double the ingredients.
Mini quiche is also great for appetizer or quick lunch. Actually, I made them for lunch and they vanished quickly, because they were so tasty. I added some dill that I had in my home. I use dill very often, it’s my favorite herb. I think it adds great taste to any dish.

Now for the recipe:
Bacon Mini Quiche
Ingredients
- 6 slices of bread
- 1 cup diced cooked bacon
- 1 cup shredded cheddar cheese
- 1 Tbsp. chopped dill
Optional
- 1 Tbsp. butter
Instructions
- Preheat oven to 350 F and prepare muffin tin.
- Use wood rolling pan and roll each slice of bread to about 5 mm. Brush each slice of bread with butter. I recommend using butter so quiches won't be to dry.
- Put each slice of bread buttered-side down into the muffin pan.
- Put diced bacon into each quiche and cheese on the top.
- Bake for 15 - 20 minutes.
- Decorate with dill.

What a great idea to use bread! I haven’t thought of using it before. I normally use pastry but if I don’t have any on hand, my quiches become pastry-less. Love this idea. Thanks for linking up at Mum-bo Monday
