I love summer salads.  Salad’s are anything but boring, the amount of different combinations to make are endless.  

I love it when they are fruit in nature, the fruit seems to give it that extra kick, or that extra feeling of refreshing summer that just simply sends those happy vibes.

1. Green Apple Salad

I always love refreshing salad. This Green apple salad with butter lettuce is no exception.  

It looks so incredibly light yet full of flavor.

2. Beet Apple And Goat’s Cheese Salad

I am a bit of a fan of beetroot and goats cheese, they are the perfect pairing.

Not only does the beet bring the total zing to the salad, but the addition of the apple completes the freshness. Totally delicious!

3. Cherry Quinoa Summer Salad

I definitely don’t use quinoa enough in my meals, so this Cherry quinoa summer salad instantly caught my eye.  

It’s something so different to the ‘normal’ salads that you would expect, so it’s the perfect dish for wanting that refreshing summer salad, but wanting to opt away from the lettuce!

4. Strawberry Caprese Salad

Not only do I love the pop of colour that these strawberries give this salad, but it just makes it feel extra summery don’t you think?

Of course the other juicy fruit for a salad has to be the mango!  

I’d eat mango on every salad if I could, so it’s not surprising that this Mango pecan salad with orange took my fancy.  

The mango and the bacon together? Well, your in heaven really arn’t you!
