  • 1½ cups plain flour
  • ¾ cup cocoa powder
  • 1¼ cups of sugar
  • 1¼ teaspoons baking powder
  • ¾ cup softened butter
  • 1 egg
  1. Sift together the flour, cocoa, and baking powder.
  2. Cream together the butter and sugar until it is smooth, then beat in the egg.
  3. Gradually stir in the sifted ingredients to form a soft dough and divide the dough into 2 or 3 pieces.
  4. Flatten the dough and wrap each portion in cling film. Refrigerate the dough for 2 hours.
  5. Preheat the oven to 190 degrees C or 375 degrees F
  6. Use cocoa powder to flour your bench top, then roll out the dough to approximately ½cm in thickness.
  7. Cut your cookies into desired shapes with cookie cutters.
  8. Place the cookies onto baking trays lined with a baking paper.
  9. Bake for 8 minutes in the preheated oven. Allow the cookies to cool on the baking tray before removing to a wire rack to cool completely.
