White Chocolate Mud Cake

If you are anything like me, you secretly go to a party hoping that there will be something of the chocolate nature to nibble on!

So, when I went to a birthday party for a gorgeous little one year old, I was delighted to see a white chocolate mud cake as the birthday cake.

Your party planning checklist will have organised your food and the birthday cake is certainly an important part of this list!!

If you were at this party, you would certainly be waiting for the cake to be cut!

The decorations (step 5 of the party planning checklist) at this party were all red and pink, so with a little added decorating around the cake, it completely tied in with its surroundings.

The result is simple yet beautiful.

  • I have outlined how to do this below;
  • Ingredients you will need:
  • White Chocolate Cake:
  • ♥ 250g cooking margarine, chopped up
  • ♥ 2 blocks of white chocolate Cadbury Dream
  • ♥ 500g caster sugar
  • ♥ 375 mls water
  • ♥ 300g plain flour
  • ♥ 100g self raising flour
  • ♥ 3 eggs lightly beaten
  • ♥ 2 teaspoons vanilla essence
  • White Chocolate Butter Cream Icing:
  • ♥ 300 grams cooking margarine at room temperature
  • ♥ 2 teaspoons vanilla essence
  • ♥ 750 grams icing sugar
  • ♥ 1 block Cadbury Dream

Instructions

Preheat oven to 120 degrees. Grease tins and line with baking paper. (To make this design use 3 loaf size tins and pour the mixture into all 3 evenly).

2: Place the butter, chocolate, water and sugar in a saucepan on medium heat and stir until melted and smooth.

3: Pour the mixture into a large bowl & whisk the flours into the mixture followed by the eggs and vanilla.

4: Once combined, pour into the cake tins and put in the oven for 2- 2 1/2 hours. Check with a skewer that it comes out dry, then the cakes are ready.

How to make this White Chocolate Butter Cream Icing:

1: Melt white chocolate in a bowl over a pot of boiling water.

2: Cream the butter, icing sugar and vanilla in a bowl, use hands to begin with and then stir with a wooden spoon until smooth.

3: Stir in melted chocolate.

4: Paste icing onto cake and use a knife dipped in hot water to smooth

How to prepare a Number 1 Cake:

Cut one end of the loaf tin to make the top part of the 1.

The other cakes are just joined together using icing between each cake to help them join/stick.

Fill all the joins with icing.
